If you have read my Brunch Guide on Root Baking Co., then you know I am obsessed. So when Root Baking Co. started their very own pizza pop-up, I was elated. Root Baking Co.’s Pizza Jean’s pop-up happens every Friday. Each week you can expect to find a red pie and white pie + several other Italian/Mediterranean-inspired dishes. The pizza toppings change weekly, but the white pie is my favorite. One time it had potato chips & beets on it! You can grab a whole pie or a slice and eat it there or take it to go!

I also enjoyed the cucumber salad & watermelon slices with aleppo pepper as a side. The cucumber salad is served with this creamy tahini dressing, it’s one of the best I’ve had.

Price (excluding tip): A whole pie is $26.15 (including tax) or $3.25 (including tax) a slice. You also have the option to add more toppings (e.g., chicken or anchovies) at an additional cost.
